A brief history of olive
oil in the Mondego Valley.
The Mondego Valley region has the best olive trees and is an area of excellence in the country for olive oil production. The perfect adaptability of the olive trees to the cold of winter and the cultural connection between the people and the olive groves has resulted in a centuries-old tradition. In the Mondego Valley, the culture of olive oil is intertwined with the culture of its people. Here, the olive grove is the queen crop. This is what makes this oil special. Ethos olive oil is extracted from the olive trees of three farms in the municipality of Guarda: Quinta de São João, Quinta da Campanária and Quinta de São Lourenço. Located in the parishes of Aldeia Viçosa, Faia and Vila Cortês do Mondego, in the Serra da Estrela Natural Park, surrounded by a peaceful landscape, these farms have a special beauty and a long tradition of olive oil production.

Olive oil has been in our family for many years. My grandfather had a mill since 1940 and the family has always harvested olives and produced olive oil. At Quinta de São João, olive oil has always been a passion and it was here that I decided to create one of the best olive oils in the world. To this family farm, I added Quinta da Campanária and, later, Quinta de São Lourenço, all located in the fantastic Mondego Valley. We kept the centuries-old olive groves, planted new ones, and built a modern mill. To have fantastic olive oil, we dedicate ourselves to honoring traditions and controlling the process from production to extraction.
Our olives
An olive grove full of the past that transforms the future.
On our three farms we have centenary olive groves mainly made up of olive trees of the Galega variety, the “Beira Star”, and a bit of Cordovil. To these olive groves we have added new ones, with the varieties Galega; Cobrançosa; Cordovil; Maçanilha and Cornicabra. The new olive groves were planted with a 7 by 5 meter spacing and are watered to maintain production stability and try to overcome its variability, while also causing less stress on the olive trees.
Production process
Modern methods that respect tradition.
Fantastic olive oil needs perfect production at every stage. The trees need to be well pruned to let the sun in; we must look after the flowers and fruit so that they are healthy when they are harvested. Then you must choose the right time to harvest, so that the oil retains all the aromas of the olive tree; and they must be harvested carefully, so as not to damage either the tree or the olive. In the end, the olives are taken to the mill to the oil can be extracted on the same day. Only in this way can we keep that special flavor that olives give us. The extraction process takes place in a modern olive press at Quinta da Campanária, using mechanical means, cold and always on the same day as the harvest. The leaves are separated, the olives are washed, and the fruit arrives with all its qualities at the hammer mill where it is ground. In the mixer, the olive mass is well homogenized with cold water and then passed to the decanter where, by centrifugation, the oil is separated from the rest. This is where we see our oil come out, which we then take to temporary storage, where it rests for a few days. This is followed by a filtering process and the oil is ready to be bottled, perfect, with all the flavor of the olives that made it.
